Warlock Cake
After making my boyfriend his Moonkin cake, naturally one of my other friends wanted a World of Warcraft cake as well. So for Dylan's birthday this year I made him a cake based on his character, a Blood Elf Warlock. I would have loved to do more with this cake but I only had a day to work on it so I did as much as I could. I used a new chocolate cake recipes from my book Collete's Cakes. It called for coffee and almond extract which made an interesting but amazing (and very s
turdy!) cake. I topped it with vanilla buttercream and, of course, marshmallow fondant.
The little felhunter on top of the cake did not want to cooperate but I finally finished him and, at least for the pictures, was able to keep his little tentacle things to stay in place. I really wish I had taken some picture before the hot, 45 min car ride to my friends house but sadly I was running late already and didn't have my camera. A bubble formed under the fondant and made me very sad but it still tasted great! Just wish I had a picture of it when it was all nice and smooth.

I was so happy to add the little felhunter to my collection! They are one of the reasons I rolled a lock ^.^ Dylan wanted to eat him but he would have either thrown up or gouged himself on one of the 4 wires I used to put it together. Everyone loved the cake which always make the hours I put into each cake so worth it! I have 3 more cakes this month so far so I hope to have lots of pictures for you!

I'm 21!
I turned 21 yesterday! My amazing boyfriend hung out with me all day and made sure I had a great time until I went out with the girls that night. I got to order my first drink at Jack Astors called a
Frozen Raspberry Twister which was pretty good. Did I have a vegan cake for my birthday? Yes. Who made it? Me of course! :) Hunter even helped me by coloring fondant and cutting out the ghosts. He's an awesome helper :) I made a Pac-Man cake with ghosts around it. The level on the game was 21 and the high score is my birth date. Several people in the restaurant came over and asked to see the awesome cake everyone was talking about and after dinner I gave our server a slice. He came back and told me how much he enjoyed it and thanked me several times which made me feel amazing. I really need to make some cards to give out to people who like my work... But back to my birthday. After dinner and cake we went to The Ale House and shot some pool. I thought it was going to be kind of quiet since it was a Monday but no...I had forgotten that it was the basketball Championship game. Duke vs.
Butler, so of course the place was packed. We still had fun and I got to try two more drinks. I got a kamikaze and a Red Headed Slut (love the drink names lol). The latter was Much better than the first which tasted like acetone. It was so nice to be able to have some girl time. We had to cut the night a little short sadly but I can't wait for us all to get together again! Thank you everyone for making my 21st birthday a memorable one!

Birthday Cake
Hunter and his brother just turned 21 this past Tuesday yesterday so today I made them a birthday cake. I was going to make a WALLE cake but around 10pm last night I figured out about how long it was going to take and how many supplies I was going to need. It was going to take me way too long on my own so I started brain storming. There was no way he was going to get a regular cake after my awesome chess board cake I made him last year. Hunter really likes the Moonkin form on his druid in World of Warcraft so I decided to go with that. It was so much fun and everyone loved it. I made a yellow cake with chocolate frosting (his favorite) and then used my new grass piping tip for the decorations. We just got a ton of little wild pansies in our yard so I picked a couple of them to add some more color to my cake. I'm making my cake tomorrow for my birthday Monday! I can't wait! I finally get to have a girls night out. I miss having girl time. I hope everyone has a great Easter!

Cheesy Vegan Enchiladas
Although this is not a baked good, it is a very good recipe! I figured since it was going to be a couple weeks before my next cake I'd share a few delicious dishes instead. I love going to VegWeb.com and this is where I found this recipe. I modified it a bit because I did not have all the ingredients. It turned out delicious! I made them for my omnivore mom and I for lunch and she loved them. She didn't even add any real cheese which to me means it's a perfect vegan dish! One more note about the recipe. I only used 2 cans of beans and only 6 tortillas and I still had about 2-3 cups of the filling left!
Cheesy Bean and Cheese Enchiladas
Ingredients:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon salt
1 teaspoon garlic powder
2 cups water
1 teaspoon mustard
4 tablespoons margarine
10 tortillas
2 small cans enchilada sauce
3 cans beans (white kidney, pinto, black), drained
2 medium onions, chopped 1 can olives, chopped
1/4 cup chopped cilantro(I used dried parsley), 1/2 cup salsa (optional)
I also added about a cup of diced, sautéed mushrooms
Directions:
In medium-large saucepan, combine flour, nutritional yeast, salt and garlic powder. Add water and mix thoroughly. Heat on medium heat until bubbling and thick. Remove from heat and add mustard and margarine. Set aside 1/2 cup of cheese sauce in separate container. Add onion, beans, olives, cilantro and salsa to sauce. Mix it up. **Pour a 1/2 cup of enchilada sauce in the bottom of a 9x13 pan. Place a tortilla in pan and cover in enchilada sauce. Spoon in filling. Roll and push to one end of pan. Continue until all tortillas filled. Pour the rest of the enchilada sauce on top and then spread reserved cheese sauce on as last step. Bake at 350 degrees Fahrenheit until brown, 30-45 minutes. Makes: 6 servings, Preparation time: 15 minutes, Cooking time: 30-45 minutes
** I would add a little more than a 1/2c since some of my enchiladas stuck to the dish.

I topped mine with some mashed up avocado with a little lime juice. A very filling, tasty dish. Enjoy!
On a non-food related matter, I am very happy to announce that Joanna is finally 100% healthy and has gained 40g since the last time she was at the vet! Her amputated tail and toe are all healed, she no longer has pneumonia, and she is shedding and growing like a pretty baby Savannah monitor should!
